For the Sausage Gravy
- 1 lb breakfast sausage
- 1/4 cup all-purpose flour
- 3 cups milk
- 1/2 tsp salt
- 1/2 tsp black pepper (or more to taste)
- Optional: pinch of cayenne or paprika
Instructions
Make the Biscuits
- Preheat oven to 425°F (220°C).
- In a bowl, whisk flour, salt, sugar, and baking powder.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Pour in the cold milk and mix just until combined.
- Turn dough onto a floured surface, pat into a 1-inch thick round.
- Cut biscuits using a round cutter and place on a baking sheet.
- Bake 12–15 minutes, until golden brown.
Make the Sausage Gravy
- Cook sausage in a skillet over medium heat, breaking it apart.
- When browned, sprinkle flour over the sausage and mix well.
- Slowly pour in milk while stirring to avoid lumps.
- Add salt, pepper, and optional seasonings.
- Simmer 5–8 minutes until thickened.
- Taste and adjust seasoning.
