Ingredients

For the Biscuits

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1/2 cup cold unsalted butter (cubed)
  • 3/4 cup cold milk or buttermilk

For the Sausage Gravy

  • 1 lb breakfast sausage
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper (or more to taste)
  • Optional: pinch of cayenne or paprika

Instructions

Make the Biscuits

  • Preheat oven to 425°F (220°C).
  • In a bowl, whisk flour, salt, sugar, and baking powder.
  • Cut in cold butter until the mixture resembles coarse crumbs.
  • Pour in the cold milk and mix just until combined.
  • Turn dough onto a floured surface, pat into a 1-inch thick round.
  • Cut biscuits using a round cutter and place on a baking sheet.
  • Bake 12–15 minutes, until golden brown.

Make the Sausage Gravy

  • Cook sausage in a skillet over medium heat, breaking it apart.
  • When browned, sprinkle flour over the sausage and mix well.
  • Slowly pour in milk while stirring to avoid lumps.
  • Add salt, pepper, and optional seasonings.
  • Simmer 5–8 minutes until thickened.
  • Taste and adjust seasoning.

Serve

Break open warm biscuits and ladle hot sausage gravy on top. Serve immediately.

  • Spicy Version: Add red pepper flakes or use spicy sausage.
